Sea jellies, or jellyfish, are invertebrate plankton that have been drifting around the vast oceans for over 500 million years. They are composed of 92 to 95% water and breathe only through their skin. They lack a heart, brain, bones, or head. One species called Turritopsis dohrnii is biologically immortal and resides in the Mediterranean Sea and off the coast of Japan.

Edible jellyfish contain a large amount of collagen in their mesoglea, a gelatinous layer between the internal and external layers of their body structure.
